Darn Good Chili


INGREDIENTS

• 1 Ib. ground beef (you can also use ground turkey or a meat substitute)

• 1 medium onion, chopped

• 3 cloves garlic, minced

• 1 red bell pepper, chopped

• 1 green bell pepper, chopped

• 2 (14.5-oz.) cans of diced tomatoes

• 1 (15-oz.) can of tomato sauce

• 1 (15-oz.) can of kidney beans, drained and rinsed

• 1 (15-oz.) can of black beans, drained and rinsed

• 1 cup corn kernels, frozen or canned

• 2 tbsp. chili powder

• 1 tsp. ground cumin

• 1 tsp. paprika

• 1/2 tsp. cayenne pepper (adjust to taste for spiciness)

• Salt and black pepper to taste

• 1 cup beef or vegetable broth

• 2 tbsp. olive oil

• Optional toppings: shredded cheddar cheese, sour cream, chopped green onions and chopped fresh cilantro


METHOD

1. Heat olive oil in a large pot over medium heat.

2. Sauté onions and garlic until softened.

3. Brown ground beef (or substitute) and add bell peppers.

4. Season with chili powder, cumin, paprika and cayenne.

5. Add tomatoes, tomato sauce, beans and corn.

6. Pour in broth and simmer for at least 30 minutes.

7. Adjust seasoning to taste.

8. Serve hot with desired toppings.
