Cooking as a young boy with his father, Executive Chef Tyler Schwenk’s love of food started at an early age, but his passion for the culinary arts truly took sail after his time spent traveling across the world while working as a sous chef on a luxury yacht.
Now at the helm of the North Side’s best new restaurant, 1898 Public House, it wasn’t always smooth sailing for Tyler. His journey started out as many chefs’ do. At age 14, he was hired at The Coeur d’Alene Resort as a stock boy and, from there, worked his way up from dishwasher to pantry and banquet preparation, and from cook to kitchen supervisor. While cooking for a year on that luxury yacht, Tyler created incredible cuisine based on the freshest ingredients at each port of call. Upon his return, he devoted time to refining his craft, learning new techniques such as butchering, curing meats, making artisan cheese and learning the art of gastronomy. He became the sous chef at Beverly’s, where he was later promoted to chef de cuisine.
Located at the historic Kalispel Golf and Country Club, you can now find Tyler at 1898 Public House, where he has taken the reins as executive chef, creating exciting foods that you won’t find everywhere else. The diverse menu is one-of-a-kind, offering a fresh twist on everything from Asian and Mediterranean, to classic American cuisine. From comfort foods to unique combinations, there’s a little bit of everything to cater to any taste.
“My goal is to have people come out here, see a great unique menu, and be reminded of their childhood,” says Tyler. Menu items such as the lobster corn dog, lobster mac and cheese, lollipop lamb chops and a modern root beer float accomplish just that.
Tyler and his team do as much as they can to support local agriculture, sourcing ingredients from local independent farmers as much as possible, revolving around seasonality. They grow many of the herbs they use at the restaurant on the property.
Chef Tyler wants to deliver that “wow!” factor to the guest, not only in flavor but in presentation as well. “Chefs are creative; that’s what we do,” he says. “To visually plate it and make it look like a piece of art; our plates are the canvasses we work with.”
The cuisine is complemented by a large, regionally inspired craft beer selection, diverse wine list and handcrafted cocktails, as well as the inviting and comfortable atmosphere and stunning panoramic golf-course views.
